rats like dark secluded places. Their sense of smell and their hearing are good but their eyesight is not up to much (which is why most prefer the warm seclusion of sewers). They are also attracted to warm spots (unfortunately that includes under your bed- I prefer rat poison which will kill them painlessly within two days. Rats are scavengers so they 'test' foods to see if they are poisoned. The warfarin based chemicals act by thinning the blood ultimately leading to a massive brain haemorrage. ) Hot water pipes are another good location. Contrary to general opinion they are not massively in love with cheese. Porage oats are a better option. If you are really sadistic you might try 'instant mash' undiluted- as and when the rodent drinks water it swells up which is usually enough to kill it.

My parents always used peanut butter for mouse traps. But we used the ones that didn't kill them. : /
